Strawberry Cheesecake Mousse

Fancy a quick dessert recipe for a last minute tea session or party? Not sure what to do with the remaining bits of cream cheese and heavy whipping cream from previous recipes? Here's a delectable yet super easy and hassle free no-bake recipe not to be missed! I recalled trying out this recipe when I was clearing out the leftovers in my fridge in preparation of our relocation in August. Thankful to this no-bake and quick recipe which I have made with a twist by taking reference from Glory Albin's Glorious Layered Desserts, I was able to continue my last of the few high tea sessions with my "twinning" friend with more home-made desserts before I departed that beautiful Sunshine state!

Strawberry Cheesecake Mousse

How about chasing away your (Monday) blues with these pretty pink dessert?!

Strawberry Cheesecake Mousse
Recipe sourced and modified from: Glorious Layered Desserts by Glory Albin
Makes two servings


Ingredients Required

Strawberry Puree
1/4 cup strawberry puree (made from about 1/2 cup fresh whole strawberries)

Cheesecake Mousse
4 oz (1/2 block) cream cheese, at room temperature
2 tablespoons powdered sugar
1/4 teaspoon vanilla extract

Whipped Cream
1/4 cup heavy whipping cream
1 tablespoon powdered sugar

4-5 fresh strawberries, chopped into small bite-sized, for garnish

Bakeware Used

Two wine glasses of desired size.

Preparation Steps
Whipped Cream
  1. In the bowl of an electric mixer (or with a hand mixer), whip heavy cream until it begins to thicken. 
  2. Add powdered sugar, and continue to whip until thick and stiff peaks form. 
  3. Scoop two tablespoonfuls of whipped cream in a small piping bag or separate small bowl, and set aside both divided whipped cream in the fridge.
Strawberry Puree
  1. In a food processor or blender, chop/blend fresh strawberries until the berries are chopped, juicy, and no piece is larger than a pea.
Strawberry Cheesecake Mixture
  1. In the bowl of an electric mixer (or with a hand mixer), beat cream cheese until smooth. 
  2. Add powdered sugar, and continue to beat. 
  3. Add vanilla, then add strawberry puree, a little at a time. Continue mixing, and beat until fully incorporated.
  4. Fold cheesecake mixture and remaining divided whipped cream together until fully combined. Taste to check for sweetness. If needed, add an additional tablespoon or so of powdered sugar, and fold in gently.
Assembling Strawberry Cheesecake Mousse
  1. Spoon or pipe (with a large piping bag, or large ziplock bag with a corner cut off) strawberry cheesecake mixture into the bottom of the serving glasses. Smooth the top slightly.
  2. Top a dollop or pipe a good amount of whipped cream on top of the strawberry cheesecake mousse.
  3. Top with freshly chopped strawberries as desired.
  4. Chill dessert in the refrigerator for 15 minutes, or until ready to serve. Best when eaten the day it was made.

The Dream Baker's Experiment
  1. The above recipe has been made with a slight twist based on what's available in my pantry and the portion is half of the original sourced recipe.
  2. The original sourced recipe suggested a layer of Graham cracker crumble at the bottommost layer for a little texture which I have eliminated (simply because I have none in my pantry).
  3. The ingredients portion for the above recipe has been divided into two equal servings. To increase the number of servings, simply divide a reduced amount per serving (by using smaller serving glasses) or double the recipe as necessary.
